Chinchón is one of the most picturesque villages and with more personality of the Community of Madrid, and although it is so close to the capital of Spain, it has retained its uniqueness: brown and gray landscapes, groups of houses on hills, that shelter its singular Plaza Mayor, and winding streets that cross the life and history of the town.
The city is set around the famous square of the medieval period, a mixture of numerous balconies and arcades, under which there are numerous restaurants and taverns.
The production of anise, a sweet liqueur, is one of the most deeply rooted traditions in Chinchon and goes back to the seventeenth century. The anise liqueur is obtained from the maceration of green anise in alcohol of agricultural origin, and its subsequent distillation. It may be sweetened or not, and consumed as a beverage or as an ingredient in sweets and cakes.
In addition of anise and sweets, the meat dishes cooked in the inns and restaurants in town are also famous.
